"What is Chutney?"

"Chutney" is the Caribbean slang for "sauce" is served with a variety of Trinidadian street foods (aloo pie, saheena, pholourie etc). Chutney is made from local fruits such as mango, and tamarind. The fruits are finely processed and seasoned with herbs and most importantly lots of hot peppers. It is used to add flavor to the food is served with. Chutneys are popular for its spiciness, but is also known to be sweet and savory. 

 

"What is Kuchela?"

"Kuchela" is a spicy condiment found popularly in the southern Caribbean. It is made from unripened mangoes. The mangoes are grated with a grater, the shreds of mangoes are spread out and allowed to air dry for a period of time, it is then tossed in a pot with mustard oil and is seasoned with herbs, spices, and hot peppers. Kuchela is served with ANY food item, as it adds a variety of taste, flavor, and HEAT!
